American-Style Barley Wine Ale
Bold, yet smooth! Fermented with dates and figs, this bone-crusher has a completely unique flavor. The concept for this beer came from an old Cellerman's manual Sam came across (for more on that, check out the video below). At about 15% abv, this beer is a great candidate for ageing. Over time, the beer dries out and the pit fruit flavors come forward and the hops recede. Our recommendation? Grab a few bottles when you find it - enjoy one now, and age the others for a bit. Let us know which you prefer! Olde School Barlewine comes out in the fall (November-ish) annually. It is available in 12-ounce bottles by the 4-pack.

Imperial or Double India Pale Ale
Too extreme to be called beer? Brewed to a colossal 45-degree plato, boiled for a full 2 hours while being continuously hopped with high-alpha American hops, then dry-hopped daily in the fermenter for a month & aged for another month on whole-leaf hops!!! Our 120 Minute I.P.A. is by far the biggest I.P.A. ever brewed! At about 18% abv and 120 ibus you can see why we call this beer THE HOLY GRAIL for hopheads! We brew 120 Minute IPA three times a year, but it goes fast. If you find some grab a few bottles, some to enjoy and some to age.

Imperial or Double India Pale Ale
Esquire Magazine calls our 90 Minute IPA., "perhaps the best I.P.A. in America." An Imperial I.P.A. brewed to be savored from a snifter. A big beer with a great malt backbone that stands up to the extreme hopping rate. 90 Minute IPA was our first continually-hopped beer, which is a method of hopping that allows for a pungent, but not crushing hop flavor. Since introducing the world to the continual-hopping method with our 90 Minute IPA, we've since released a continually-hopped 60 Minute IPA, 120 Minute IPA and even a 75 Minute IPA (a cask-conditioned blend of 60 & 90 Minute IPAs). In addition to the continual-hopping 90 Minute IPA recieves during the boil, we also utilize our 'Me So Hoppy' device to dry-hop the beer during conditioning (check it out in the video below). This beer is an excellent candidate for use with our Randall The Enamel Animal filter!

American-Style India Pale Ale
Our 60 Minute IPA is continuously hopped - more than 60 hop additions over a 60 minute boil (getting a vibe yet of where the name came from?). 60 Minute is a session India Pale Ale brewed with a slew of great NorthWest hops. A powerful, but balanced East Coast I.P.A. with a lot of citrusy hop character. The session beer for hardcore beer enthusiasts!

This recipe is the actual oldest-known fermented beverage in the world! It is an ancient Turkish recipe using the original ingredients from the 2700 year old drinking vessels discovered in the tomb of King Midas. Somewhere between wine & mead; this smooth, sweet, yet dry ale will please the Chardonnay of beer drinker alike.

American-Style Brown Ale
Forget about the car companies, this is the original hybrid, a cross between a Scotch Ale, an India Pale Ale, and an American Brown. Our Indian Brown Ale is well-hopped and malty at the same time (magical). The beer has characteristics of each style that inspired it; the color of an American Brown, the caramel notes of a Scotch Ale, and the hopping regiment of an India Pale Ale. We dry-hop the Indian Brown Ale in a similar fashion as our 60 Minute IPA and 90 Minute IPAs. This beer is brewed with Aromatic barley and organic brown sugar.

American-Style Pale Ale
This is our original brew and our most approachable beer. It's brewed with a premium barley and whole-leaf Glacial & Warrior hops. Our Shelter Pale Ale has a fine malt backbone and a slightly nutty flavor. A versatile, quaffable beer. The Shelter Pale Ale is available exclusively in the Mid-Atlantic region.

American-Style Stout
A dark beer made with a touch of roasted chicory, organic Mexican coffee, St. John's Wort, and licorice root. Brewed with whole-leaf Cascade and Fuggles hops, the grains include pale, roasted & oatmeal. Chicory is one of the first beers we started brewing when the brewpub opened back in 1995. That's back when we had a teeny, tiny brewing system and had to brew all day, every day to keep up the bar stocked. Brewing with the same four ingredients got real boring, real fast. That's when Sam's ADD kicked in and he started adding some non-traditional brewing ingredeints.

American-Style Pale Ale
This is a blended beer that we've been brewing for the past several years and it's recently been gaining in popularity. For Burton Baton we first brew two 'threads' or batches of beer: an English-style Old Ale and an Imperial IPA. After fementating the separate beers in our stainless tanks, the two are transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month. When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% of the beer - so tread cautiously! Burton Baton is brewed and released three times per year.

Dark, rich, roasty and complex, World Wide Stout has more in common with a fine port than a can of cheap, mass-marketed beer. Brewed with a ridiculous amount of barley. Have one with (or as!) dessert tonight!

American-Style Brown Ale
An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities.

A bigger, bolder version of our Raison D'Etre. This is a bulbous, brown ale brewed with a bunch of malt, brown sugar and raisins. In case you care... the average 12 oz. serving has approximately 425 calories.

A deep, mahogany Belgian-style brown ale brewed with beet sugar, raisins, and Belgian-style yeast. We began brewing this one at our brewpub in 1996 (we began packaging and selling it sometime in 1998) as the answer to the question, "What beer should I enjoy with a wood-grilled steak?" Raison D'Etre fits the bill, tasty and as complex as a fine, red wine.

Fruit Beer
An ale brewed with a ridiculous amount of pureed raspberries (over a ton of em!). Fort has a Belgian Ale type base, then we follow a similar fermentation process as we use on our other high ABV beers, 120 Minute IPA and World Wide Stout. Due to its high ABV, Fort is an excellent candidate for cellaring. Grab a few bottles, enjoy one now and lay the others down for a few years (want to know when the Fort you find was bottled? Check the 'Bottled On' date on the neck of each bottle). Fort is also an excellent food beer. Our favorite pairings include anything chocolate or a nice piece of duck.

Lawnmower is our intro for those who need a little help jumping feet first into the crazy world that is Dogfish Head beer. It's a starter beer, but it's not dumbed down. Lawnmower is made with quality ingredients and is a great thirst quencher - perfect to enjoy after a day in the sun mowing the lawn (or anything else that gets you hot and bothered)! Belgian-Style Pale Strong Ale
A belgian-style Golden Ale fermented with blackberries and blueberries. This beer is dosed with real, pureed blackberries and blueberries which allow the fruit flavors and aromas to be woven into the actual taste of the beer. The beer is fermented with the same yeast that we use in our Red & White and Pangaea.

Belgian-Style White (or Wit) / Belgian-Style Wheat
A big, belgian-style Wit brewed with coriander and orange peel and fermented with Pinot Noir juice. After fermentation a fraction of the batch is aged in one of our giant oak tanks. This has been one of our most popular Limited Edition beers at both our Rehoboth Beach, DE brewpub and at festivals. It successfully marries the refreshing citrusy qualities of a Belgian-style white beer with the robust complexity of a bold red wine.

Herb and Spice Beer
A full-bodied brown ale with smooth hints of pumpkin and brown sugar. We brew our Punkin Ale with pumpkin meat, organic brown sugar and spices. This is the perfect beer to warm-up with, as the season cools. Punkin Ale is named after a locally-famous and seriously off-centered event here in southern Delaware - Punkin Chunkin (check out some of these Discovery Channel videos of Punkin Chunkin, you gotta see it to believe it!). In fact, Punkin Ale made it's debut as it claimed First Prize in the 1994 Punkin Chunkin Recipe Conest - yes, that was a full 6 months before we even opened our doors for business. Punkin Chunkin has grown in size and scale with pumpkins now being hurled more than 4,000 feet through the air! If you come down to see if for yourself - come by and visit us. Since then, we've brewed Punkin Ale each and every fall. It is released right around September first each year. When you find it, grab some extra because it's usually gone by Thanksgiving.

In honor of the 40th anniversary of the original release of Bitches Brew, Miles Davis' 1970 paradigm-shifting landmark fusion breakthrough, we've created our own Bitches Brew - a bold, dark beer that's a fusion of three threads imperial stout and one thread honey beer with gesho root, a gustatory analog to Miles' masterpiece.Featuring the album's iconic artwork, created by the late Mati Klarwein, on its label, Dogfish Head's Bitches Brew was unveiled at SAVOR, An American Craft Beer & Food Experience, June 5, 2010 at the National Building Museum, Washington DC.

Belgian-Style Pale Ale
Brewed with ingredients from each and every continent, this is slightly spicy ale, with a mouthful of rich flavors. Pangaea is a great food beer. Our list of worldly ingredients includes: Crystallized ginger from Australia Water from Antarctica Basmati rice from Asia Muscavado sugar from Africa South American quinoa European yeast and North American maize. Pangaea is released annually in the fall and is bottled in 750ml bottles.

American-Style India Pale Ale
Aprihop is our fruit beer for hopheads! It is an American IPA brewed with Pilsner and Cystal malts massively hopped in in the continuous fashion. The flavor is complimented by the addition of Apricots. After fermentation the beer is dry hopped with irresponsible amounts of Amarillo hops. The beer is hoppy in the aroma with the apricots playing a supporting complimentary role. The flavor is rich with late hop flavors and it's bitterness is tempered by just the right amount of malt sweetness and fruity undertones from the apricots. This is one of our most popular seasonal beers and we've been brewing it each spring for quite a while now. We release the beer each March and you should find it on the shelves through May.

Imperial or Double India Pale Ale
2011 marks the 100th birthday of Mississippi Delta bluesman Robert Johnson who, according to legend, sold his soul down at the crossroads in a midnight bargain and changed music forever. Working again with our friends at Sony Legacy (yup, the same folks we did our Miles Davis-inspired Bitches Brew with), Dogfish Head pays tribute to this blues legend by gettin the hellhounds off his trail and into this finely-crafted ale. Hellhound is a super-hoppy ale that hits 100 IBUs in the brewhouse, 10.0 ABV, 10.0 SRM in color, and dry-hopped with 100% centennial hops at a rate of 100 kilos per 100 barrel brew-length. Can you tell we at Dogfish are stoked for this mighty musical centennial? To accentuate and magnify the citrusy notes of the centennial hops (and as a shout out to Robert Johnsons mentor Blind Lemon Jefferson) we add dried lemon peel and flesh to the whirlpool.

Belgian-Style White (or Wit) / Belgian-Style Wheat
A witbier bursting with good karma. Made with dried organic orange slices, fresh-cut lemongrass and a bit of coriander, this Belgian-style white beer is a great thirst quencher. Namaste was originally brewed at our pub in Rehoboth Beach with our Italian friend Leo from Birra del Borgo. It was a tribute to our friends at 3 Fonteinen brewery in Belgium, who had devastating production loss (1/3 of their annual production) in 2009.
